FAQ—How do I preserve grape juice?
The question: I have some fresh grapes that I would like to process into bottled juice. I intend to store this in the kitchen (17-27º). Do you know of a grape juice recipe or procedure or a website with the necessary information?
Jack Ziebart answers: To prevent the juice from fermenting at 17c to 27c it would have to be frozen or pasteurized. See http://www.concordgrape.org/bodyhistory.html for some background on Welch's grape juice. There is a basic recipe at: http://www.hugs.org/Grape_Juice.shtml
More information is available at: http://www.elise.com/recipes/archives/000107making_grape_juice.php (Read the comments at the bottom of the recipe.) There is another method at: http://www.backwoodshome.com/articles/kelley41.html but it would take a lot of jars for 100 lbs. of grapes.
Instead of canning you could freeze the juice.
